Simplify order capture for MWP rehearsal

This PR simplifies the new order capture experience for first-deploy rehearsal.

Highlights:

• New orders now start with one visible line instead of five blank rows
• Keeps edit behavior intact for existing multi-line orders
• Adds a simple flow cue: customer/date → item/quantity → save order
• Makes customer/date visually primary
• Makes optional dispatch/visibility sections less dominant
• Preserves freeform draft item entry and product suggestions
• Updates the MWP readiness audit

Out of scope:

• No advanced catalog, pricing, modifiers, variants, recipes, inventory, or procurement
• No order semantics changes
• No broad i18n churn
