docs(alt): add missing alt text to dashboard and widget screenshots

Summary

Adds meaningful alt text to 20 documentation screenshots that previously had empty alt attributes (![](...)). Alt text improves accessibility for screen-reader users and helps LLMs understand image content when processing the docs.

This is batch 1 of an image alt-text audit. The audit found 65 images with empty alt text across 32 files. This run fixes the first 20 images (the per-run batch limit). 45 images across 25 files remain — run the audit again to continue.

A pre-commit style review also replaced two em dashes in prose (in user-management-settings.mdx and email-domain-rules.mdx) to match the no-em-dash style rule.
