AffineurOps is an early-stage concept for software built around the specific needs of professional cheese aging operations: the caves, cellars, and facilities where wheels are aged for months or years under carefully managed conditions. The target user is the affineur or cave manager who currently tracks microclimates, compliance records, and inventory value across a spiral notebook and a collection of spreadsheets.

AffineurOps is a single-codebase prototype at this stage — no distributed services or production database infrastructure is in place. The current structure is exploratory, organized around the core domain concepts (zones, lots, aging records, compliance events) to validate the data model before any production build.
