Add /26.1 version-root redirect for 26.2 GA - #196

When 26.2 goes GA, 26.1 moves from /streaming/current/ to /streaming/26.1/. Adds the version-root redirect matching the existing entries for 25.3 and older.

When 26.2 goes GA (beta merged into docs main), 26.1 moves from
/streaming/current/to/streaming/26.1/. This adds the/26.1version-root redirect following the existing pattern for/25.3through/23.3.The other GA steps in this repo are already in place from the 25.3 cycle: the playbooks carry no
betaentry andnetlify.tomlalready redirects/beta/*to/streaming/current/:splat.Merge at release time (or any time — the redirect target 404s either way until the release build publishes /streaming/26.1/).
