Finalize the CHANGELOG [Unreleased] entry as the stable 2.1.0 release (includes the privacy export modes, OCR support, Lite/Full variants, and today's presidio-analyzer/spacy/cryptography security fixes). Bump the source prerelease marker to beta.3 to rebuild with the updated dependencies before promoting to stable.
