Now supports up to pandas 2.3.X. No compatibility changes needed. I think v3.0 also wouldn't cause issues, but I don't want to drop Python 3.10 yet.
Unrelatedly, builds on #14 to allow string dates in all remaining simulator functions that take dates as arguments.
