This PR updates the email addresses provided in the documentation with the new .org domain.
Since this is all researcher-facing and nothing is related to tech support, most of these changes are from the old gmail address to researchers AT CHS .org.
There's one place where the contact info is specifically for Melissa, so that has been changed accordingly.
Question: Should we change/remove the info for the MIT lawyer re: data agreement changes, or does that stay as-is?
