refactor: rename project from matledger to nilvar#5

The name "matledger" collides with existing products. nilvar is a nickel alloy engineered for near-zero thermal expansion — "nil variance" maps directly to the immutable, append-only event log guarantee. Renames: src/matledger -> src/nilvar, MatledgerError -> NilvarError, CLI command matledger -> nilvar, MATLEDGER_* env vars -> NILVAR_*, urn:matledger: -> urn:nilvar:. All 374 tests pass, ruff and mypy clean.
