Description:
Creates a subsection for Elasticsearch in the connector reference docs and adds a page for the new OpenSearch variant. OpenSearch variant docs are mainly a rehash of the Elastic docs; would love to know if there's anything materially different about the connector's functionality that should be mentioned.
