My personal projects are short bursts of utility, experimentation, or inspiration. Here are a few that are readily demo-able:
I generally prefer strongly-typed pure functional languages/frameworks like Elm and Elixir. These fit my mental models and they're generally lightweight (low-ish LOC, cheap and fast to run). Sometimes I'll fall back to JS/TS/Ruby when I'm less concerned about quality, I'm not sure what I'm building, or I don't expect to come back later. Practically speaking, C# is the language I've done the most professional work in.
