Update ESLint config to enforce stricter typing standards (no-explicit-any and no-unused-vars). Fixed all resulting type errors.

Update `.eslintrc.cjs` to set `@typescript-eslint/no-explicit-any` and `@typescript-eslint/no-unused-vars` to `error`. Fix resulting linting errors in `src/lib/types.ts`, `src/lib/components/Icon.svelte`, and `src/routes/cv/+page.svelte` by utilizing correct typings, specific `unknown` types where necessary, and properly typing dynamically imported modules.

Do we have to use unknown ? I'd prefer actual types if possible.
