Once the next https://github.com/jupyter-book/myst-theme is published (after 1.1.1), the logo_alt should appear as alt text on the header logos. This will resolve the related accessibility warning.

This PR resolves some accessibility issues related to the the JupyterBook v2 book theme template itself as well as a couple issues stemming from notebook-rendered content.
