Consider allowing arbitrary customization of the zod validator

Each field internally has a Zod validator. Consider exposing a way to modify this, so that the full features of Zod can be used.

I expect things that could be done to the Zod validator that would break Ganzu, so this should probably be an advanced usage if we do it at all.
