It turns out that nowadays, vscode almost supports this built-in:

With the settings

  "markdown.copyFiles.destination": {
      "**/*": "${documentDirName}/${documentBaseName}.assets/"

  "markdown.editor.filePaste.enabled": "smart",

in .vscode/settings.json (reload after editing),

I can use CTRLSHIFTP "Paste" (or alternatively CTRLV if no extension like vsvim overrides that) and it will paste the image in my desired folder ./mynote.assets.

Sadly, it only supports unix timestamps as names, not YYYY-MM-dd-HH-mm. And by default it names everything image-1.png (incrementing number)

Best I got was:
