Clarify archetype property: `level` or `difficulty`

Current Behavior

Courses and Certifications differ in their name for this same property. Can we be consistent?

NOTE: difficulty is not a property.

Desired Behavior

Remove all mention of difficulty. Ensure that level is the property listed.
