Streamline tech stack

Collection of ideas how the tech stack could hopefully be more unified and simplified:

• Windows in general: switch to WSL2/Ubuntu setup
• Windows: use Windows Terminal
• Universal (if WSL2 is used for Windows): Use Homebrew as package manager
• macOS: Use homebrew casks to install apps (other than command line tools)
• Windows: maybe use winget or scoop for apps
• Universal: maybe switch to uv (from Miniconda)
• Universal: maybe switch to marimo (from Jupyter Notebooks)
