spdlog dependency clarifications

This looks like a useful CXL perf tool, thanks!

In running cmake I am getting into issues with the header-only spdlog file locations. Can the install flow be expanded a bit as to where to place spdlog files, any env variables or file tweaks to set from a fresh clone?

https://github.com/SlugLab/CXLMemSim/blob/main/.github/workflows/cmake.yml You can use this, do not point to the system spdlog-dev, you can manually point to the spdlog-dev yourself.
