Create centralized documentation for all environment variables and secret management requirements across NotifyChain services.

Tasks
List all environment variables.
Explain purpose of each variable.
Add sample configuration.
Include security recommendations.

Acceptance Criteria
Variables are fully documented.
Sample configurations work correctly.
Security practices are included.
