nextcloud-aio doesnt work

uptime-kuma ist working ... so the .env should be fine

So just to confirm you are using the /bin/blueprint shell script to bring these up as typically when it states variables are not set default to blank, you have ran docker compose directly (or maybe from a subfolder? that might be an issue also) and the script passes both the service env and the base env file.
