Fix issues in high-contrast-themes.md

Replace stale 'Settings > Ease of access > Contrast themes' path with the
correct Windows 11 path 'Settings > Accessibility > Contrast themes'. The
same file already uses the correct path on line 19; this fixes the
inconsistency in the Contrast colors section.
