Fix version numbers: restore WinUI 2.x format

Corrected 'WinUI for UWP.X' back to 'WinUI 2.X' in 31 files (35 instances).
Version numbers like 'WinUI 2.6', 'WinUI 2.7' should remain as-is since
they refer to specific versioned releases, not the general term 'WinUI 2'.

Examples fixed:
- 'WinUI for UWP.6' → 'WinUI 2.6'
- 'WinUI for UWP.3' → 'WinUI 2.3'

Note: 'WinUI for UWP 2.6' (with space) in release notes is correct.
