Replace AI cards with CELA-approved content; remove overview
- Delete overview.md - Update Click to Do, Microsoft Paint, Windows Studio Effects application cards - Add Image AI APIs, Phi Silica, Text Recognition (OCR) platform cards - Update TOC to remove overview and add new platform cards Co-authored-by: Copilot <[email protected]>
