MAINTAINERS: Add Apple DockChannel entries

This patch adds the new directories and files
created while adding support for Keyboard HID
over Apple DockChannel to the block in MAINTAINERS
for the Asahi Linux (Linux on Mac devices with Apple
Silicon chipset) project.
